Asparagus and Leek Pasta with Feta

Ingredients

  • 1 bunch of asparagus chopped into one in pieces
  • 2 bunches (about 6-8) leeks (white parts only), chopped and braised in 3 tablespoons of butter until limp and transparent
  • 1 clove of garlic (put through a press)
  • 8 oz. whole wheat corkscrew pasta
  • 1 8 oz. block of feta cheese, crumbled

Steps

Cook pasta. While pasta is cooking , melt butter, drop in chopped leeks, cook on medium to low heat until limp and transparent (about 10 minutes). Add pressed garlic, salt, pepper.

Very simple recipe here. I think I know what you're thinking...no, you can't make these with ground beef, it needs to be ground pork.  But trust me, it's worth it.

I usually make this with the Chinese cabbage stir-fry.  It's a good substitute for Chinese takeout when you can't get any.

  • 2 x 280ml cartons whipping cream
  • 2 tablespoons golden syrup
  • 1 small tin condensed milk
  • 5 tablespoons granulated sugar
  • 1 teaspoon bicarbonate of soda
