Pork Meatballs

Very simple recipe here. I think I know what you're thinking...no, you can't make these with ground beef, it needs to be ground pork.  But trust me, it's worth it.

I usually make this with the Chinese cabbage stir-fry.  It's a good substitute for Chinese takeout when you can't get any.

Ingredients

  • 1 lb of ground pork
  • 1 cup of breadcrumbs
  • 1 egg
  • 1 green onion
  • 1 tsp of mustard powder
  • vegetable salt, coarse salt, and ground pepper to taste
  • 1 bottle of barbecue sauce

Steps

Preheat the oven to 375 degrees. 

Peel and chop the green onion.  In a bowl, combine the pork, egg, breadcrumbs, and onion.  Squish the mixture together by hand until it's about 1/2 mixed.  Add the mustard powder and seasonings and finish blending the mixture. 

Roll small meatballs, no more than 1.5 inches in diameter (my mother and I differ on this).  Place them in an oven-safe baking dish with a little bit of distance between them. 

Brush the top of each meatball with barbecue sauce.  Place the dish in the oven for 30 minutes.  Slather the meatballs with a bit more sauce right before serving, then go to town.

Mmm yum!

But if I go to town after I serve them, they'll get cold or my cat will eat them =(!

Just put some plastic wrap on them and the cat will have no luck, sir!
